    Quick Shrimp Enchilada Bake
    Delicious! I let it sit about 10 minutes before I cut it up. More on the recipe about my substitutions. I was stuck at home with a bunch of weekend chores so I used what I had on hand. I'll mix up the leftover corn with the leftover refried beans and make some quick burritos.

    hehe I find cilantro isn't that bad with some lime juice on it. I had lime but no cilantro and didn't want to make a trip to town.
    These reheat nicely in the microwave which is a plus for me as I always have leftovers when I cook.
