Rave Review Chuck Roast By: Chefmeow

As soon as I saw this recipe, I knew I had to try it. I love sauerkraut and this was the first time I ever saw it paired with beef instead of pork. The amount of sugar caused me to raise an eyebrow, but I decided to make the recipe as written just out of curiosity. DH and I had mixed feelings about it when we first tried it because it was a little too sweet. However, the flavor grows on you. Even though it’s sweet, it’s also really peppery which is what DH loved the most. This recipe is a keeper and one that DH has asked that I make again soon. Here’s the review I posted with the recipe:

"This recipe is uniquely different. It’s really sweet, a little bit of sour, and very peppery with each doing its part to balance all of the different flavors. Personally, I found it better the second day after the flavors had time to blend together. This recipe is tagged for a crockpot, but I put it in a heavy Dutch style covered pot and simmered on the stovetop. The roast turned out very moist and pulled apart easily just as you would expect from a perfectly cooked chuck roast. Date: 11/8/15"

What a great looking recipe DIZ! I would have second guessed that amount of brown sugar as well, but glad you stuck with it, and that it worked out in the end! That is an amazing picture, where do you get all of that natural light from this time of the year?! :) :) Thanks for showing us!

Thanks Mommyluvs2cook! Where to begin with the lighting?! I've always struggled with lighting, especially after moving into this house. DH finally got tired of me complaining and surprised me with some photography lights for my B-day. That helped enormously! Then two years ago, he gave me a new DSLR camera for X-mas. Prior to that, I had been using an old "broken" camera that was about 15yrs old. I used every trick I could think of trying to create light. Now if I could just learn how to put colors together. lol!

Great photo, DIZ! That crazy combination of ingredients sound like they all come together in one big plate of yumminess in the end!
