    Red Snapper Parmigiana
I loved this - although Romano cheese stinks while it cooks! :)
I was curious about the white wine marinade. I'd never seen a marinade where wine was the only liquid. It was really good! It added a bit of a tang, kinda like lemon.
I lost some of my breading while plating, darn it. :(

Oh no! I just told Mr. P that if what you're cooking doesn't smell good, it's not going to taste good. Now you go and prove me wrong. ;-O

Since Illinois is not known for it's seafood ;) and I truly don't know where I could find fresh Red Snapper, I believe I'll try this one with frozen tilapia...

hehehe, gkw. I suppose "stinky" is kind of subjective.
A friend and I were traveling in France about five years ago and he was raving about Camembert cheese. Just had to get some Camembert. Its all he could talk about. I was so intrigued! He finally got some and proudly showed me, so anxious to share this treasure. Ewwwwwww! I had to leave the table. Gag, gag, gag! He was in heaven though. :-D

That's funny! I LOVE red snapper and I actually have some in the freezer right now! I think I'll make this one next week, but stick with using the parmesan lol! As I recall I have tried Romano and did not care for it.
Your pic is pretty even if you did lose some breading ;)

Thanks, ml2c. It was very good. First time I had cooked with Romano. It is pretty strong. But, it must have really tasted good because I went back into the kitchen to find one of my cats on the counter and she had eaten half of a fillet! Bad kitty!!! :)

Used parmesan on this and it was super simple and easy! Left out the red pepper flakes and didn't have any lemons (that's probably a first) so I used limes for the squeeze instead. Also used fresh thyme. My red snapper filets were HUMUNGO! I got a nice crunchy breading but a little did fall off but not much. Thanks for sharing this Frankie!
