    Ritz Tomato Parmesan Casserole

    It's a nice casserole, even warm. Mother doesn't like her tomatoes hot but liked these. Instead of a "good stuff Maynard" I got a "not bad Maynard" comment.

    I liked it, even with a sore mouth. I think this dish will have a lot more flavor when cool. It is important to let the tomato slices drain well to keep a lot of soup from forming in the bottom of the casserole. Might want to give the slices a squeeze to help the draining along.

    Didn't give the tomatoes a chance to cool righteously. I was hungry. Made up a batch of gravy and layered the casserole between bread and the gravy on the plate. Heavy on the gravy. Made the tomatoes "pop" kind of sweet when I bit into a piece.

    I need to make this again and let it chill a little before serving.
