Roasted Acorn Squash Stuffed With Vegetable Biryani

    A good recipe with interesting flavors. Kind of raw with all that uncooked onion in there but I guess that's the way it's supposed to be, although I would saute the onions and garlic and ginger first next time.
    I'm thinking this recipe is only supposed to use two acorn squashes as it serves 4 people.
    I did have trouble broiling the squash halves. When they were charred, the meat was not fully softened. Finished softening up the squash in a little water in the microwave.
    It's tough cutting the squash flesh in squares without cutting through the skin. Settled on spooning out the flesh without the benefit of cutting into squares.
    Cut back to 1 teaspoon chili powder to ensure it wasn't too spicy for us.
    Once it all goes together, I think it needs to be reheated.
    It is a tedious recipe and the flavor is good. Wound up with two loads of dishes to wash.

    That was quite an undertaking you did there. I looked at the recipe and said "too many ingredients for me." No wonder you had so many dishes to do.

Why would someone give how to make biryani paste then list store bought stuff. Could be a mistake, or could be the total amount of biryani paste to use. But then why make so much of it. So I used the whole measure of paste sans the store bought comment.
    The biryani paste tastes akin to salsa.
    Mother liked it. Even after complaining that acorn squash should always be made with brown sugar and butter.
    Saw the featured pic and since mother likes acorn squash so much, I went for it. It is quite an inexpensive dish if the recipe really means to use only 2 squash.
    I could bump up the chili powder another teaspoon if I make it again. We'll see.
