    Doubled the recipe without trouble.
    Olive oil measurement is nebulous. I matched it with the balsamic vinegar amount.
    Smooshed up the roasted garlic before putting it in the chopped tomato. Destructions really didn't say, but I think I prefer it smooshed up instead of whole cloves.
    Tossed the eggplant in the sauce before pouring it on the baking sheet.
    Liked the taste. Forgot the Parmesan on the first serving but will grab some for the next.
    Mother thought it was a little sour and had pickle juice in it.
