    I totally, absolutely, over the moon loved this. This was a perfect dish for me to have on a Friday night after a week of work. So easy and this was so good. I even managed to find some thyme in my garden. Made it pretty darn close to spec using my cast iron skillet which was perfect for the job. Used a bottle of Guinness and four garlic sausage. Heaven indeed!
    The only thing I would caution is if you don't like the taste of stout, you won't like the onions. Me - I loved them! :)

    Your picture looks awesome!! I think I would use something more like a Shiner for the beer in this....can't bring myself to buy the Guiness. My husband tilled up our garden the other day and found a hidden thyme plant...I was so upset! I could have been using it!!

    I love cooking with Guinness although I'm not a big drinking fan. You could use a milder beer, of course, for a milder flavor. They re-heated pretty well, too!
