I made the bread version of this. I was so worried it all wouldn't fit in the pan! Just by the amount of each ingredient, I was skeptical...but if fit just fine and rose nicely. I didn't add my toasted coconut and nuts until about 15 minutes until it being done because I didn't want them to burn....but since the top was already cooked the topping wasn't staying on very well when cut. No biggie though...this is an awesome bread...kids loved it and I loved it! Perfect sweetness to :)

Wow, that looks really good! I'm glad you did the bread version. Its nice to know that it works because one thing I don't own is a muffin tin. Neat idea of slicing and freezing! I like that, too!
