Sausage Stew

    I tried Zoe's Sausage Stew recipe with a few changes based on my kitchen sitation. I used approximately a pound and a half (5 links) of honey and garlic pork sausage from Costco. I boiled it first to get some of the fat out and then let it cool before slicing it to add to the recipe. I also boiled the carrots before adding them to the pan, reserving thecooking liquid to use in place of the water and tomatoes in the original recipe, adding leftover chicken stock to make up the balance of liquid. I doubled the amount of carrots called for as they were the only fresh vegetable I had on hand and eliminated the mushrooms for the same reason. For rice I had small amounts of arborio rice and quinoa left in separate packages so I used both up making up the quantity needed. In terms of herbs I use a Weber Grill Herb and Garlic mix I got at Sobey's. I thought about adding frozen peas but didn't at the last minute. I was looking for the sweetness of the carrots and honeygarlic sausage and thought the peas might take away from that. It al seems to have turned out quite well.
