Shrimp And Avocado Omelet

    Never would have thought of shrimp in an omelet, but it works!! I really can't wrap my head around shrimp in the morning, so I made these for a quick dinner the other night with leftover shrimp. After my first bite I thought the avocado/tomato salsa needed acidity, so I squeezed lime juice over it and it was perfect! This was really good and my omelet actually came out in one piece!

    Shrimp in an omelet sounds wonderful! I think its a really good dinner idea. Beautiful picture! Nice job on the one piece! :)

    Great photo! This sounds really good. At first glance, you wouldn't think this combo would be good, but I make one with crab and asparagus. Seafood really takes omelettes to a whole new level.
