Silky*-chocolate Pudding

    Has a nice chocolate flavor.
    I'm not sure about the way the ingredients are assembled. I always thought that, in a custard, the eggs are tempered into the mix and used as a thickening agent. Well, in this recipe the eggs are tempered into the pudding AFTER it has been thickened with cornstarch and off of the oven. I'm sure there is enough residual heat to cook the eggs.
    The pudding, when cooled, pulls cleanly away from the side of the container.
    Regardless, mother likes it to sooth her craving.

    Mommyluvs2cook, since there are no exotic ingredients involved, I bet you already have everything on hand to whip some up. If you have any espresso powder on hand, add a pinch to enhance the flavor - yum!

    Yes, espresso works well to deepen the chocolate flavor, and so does a star of anise. But you have to remove the star before pouring into their molds. I didn't do either.

    Points, I bet it was still good! Here's a question for all you homemade pudding makers. How do you keep a "skin" from forming on the pudding? I place plastic wrap directly on the surface of the still warm pudding, but when I remove it, it takes the top layer of pudding with it! Any other ideas??

    Had a portion of the pudding today. It's good stuff. My fridge is on the blink so I'm trying to get out all the stuff that would spoil.
