    Skillet Creole Chicken Fricassee by Shandy

    This is very quick and easy to make, and super delicious! Just like a gumbo but without fussing over the roux. I followed the recipe exactly except I used chopped/shredded leftover rotisserie chicken. I tossed the cooked chicken with the creole seasoning then added it to the skillet with the cooked sausage near the end.
    I topped it with green onions for some colour and freshness, and served over rice. Everyone loved it, even the kids. ;) I will make this in lieu of any gumbo recipe for now on!


    *I also make my own creole seasoning, so I don't how this would taste with store-bought.

    That's why I make my own seasoning, so I control the spice! The kids wouldn't be able to handle all the cayenne or white pepper, so I take it easy on that. :) I found the 3 tsp's of creole seasoning called for to be a perfect amount of seasoning for all the meat and sauce called for, so it's definitely not much in my opinion ;)

    That is something else I have never made! It looks like a good meal stretcher when served over rice. I wonder if that would go over pasta as well? Seems like it may work. Fabulous colorful picture!

    Yes it would Frankieanne! Thin the sauce out with more chicken stock and toss it with bow tie noodles or spaghetti. We have that a lot too, but I don't always add the sausage when I make it that way.
    If you can't find Andouille you can sub with any smoked sausage. Andouille is hard to find around here! I lucked out this time ;)
