Cornbread by another name.
I didn't taste these. Mother had a craving for flapjacks after the sun went down.
She said the taste was OK but they were a little firm for her. I'm not surprised. It is after all fried cornbread, heavy on the cornmeal from my normal cornbread recipe.
Batch made 5 cakes.

Had one dry and cold for breakfast. They certainly are less flexible than regular pancakes. They are filling.
Don't think I'd make these again as mother has a tough time eating them.
