Southern Corn Meal Flapjacks Recipe
Get out your griddle, or large iron skillet, and start flipping these flap jacks. So delicious. May add niblet corn, green chilies, or onion. Put some one in charge of the flipping, and you'll have a kitchen party in no time flat!!

Ingredients
  • 1-1/2 cups corn meal (I use white)
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 2 teaspoons sugar
  • 1 teaspoon soda
  • 1 cups buttermilk
  • 2 eggs, well beaten
  • 2 tablespoons salad oil
  • NOTE: Give them a Southwest twist by may adding a little niblet corn, green chilies, or onion

Directions
  1. Combine flour, corn meal, salt, and sugar.
  2. Dissolve soda in buttermilk
  3. Add to corn meal mixture
  4. Add beaten eggs
  5. Add salad oil
  6. Mix well
  7. Cook on greased griddle or large iron skillet

I grew up eating corn meal flapjacks... I think my Grandma called them Johnny Cakes. I love them we had them at breakfast with syrup and butter... and sometimes at supper with our meal as the bread in the summer... No turning on the oven in our house when it was hot ... unless the preacher was coming to dinner! LOL
