    Southern Scalloped Tomatoes

    The ingredients for southern scalloped tomatoes are very well balanced. This is a fresh light casserole that is a natural for taking advantage of those excess tomatoes that seem to collect over the summer. The casserole is also great color and adds a lot to a plate. Pictures posted for out of the oven and on the plate.

    Made from home grown tomatoes.
    The cheese in Otter's pic called out to me so I added Parmesan and cheddar and Mozzarella. Worked out to be just under 2 cups. Added cheese in last 5 minutes of bake time.
    Also sauteed the onions and bread in bacon grease since I had to fry up the bacon anyhow. Added the garlic to the last minute of onion saute. Didn't think I was going to like the taste of raw garlic in the dish.
