    This was a different way of making Scalloped Tomatoes for me - in the past I've mixed the bread and tomato together and ended up with sort of a baked pudding - and this was a very nice change. Really delicious!

    I did just saute the onion in olive oil and I didn't have any fresh basil (which chefjeb said was preferred) but I did have a jar of pesto so just added a little of that to the onions & garlic in the skillet. But I used butter on the bread cubes because I thought that would give better flavor. After about 20 minutes of baking, it seemed the bread was getting a little too brown, so I covered for most of the remaining time.
