Southern Scalloped Tomatoes

- 6 to 8 (approximate) tomatoes, unpeeled shopping list
- or 2 cups canned, drained shopping list
- 2 cups thinly sliced onions shopping list
- 4 tbs butter, divided shopping list
- 2 tsp salt shopping list
- 1/4 tsp black pepper shopping list
- 2 tbs brown sugar shopping list
- 2 tsp dried basil or 1`/3 cup fresh (preferred) shopping list
- 1 tsp minced fresh garlic shopping list
- 1 tsp oregano (optional) shopping list
- 2 cups bread cubed shopping list
How to make it
- Saute onion in 2 tbs butter until wilted, set aside
- Saute bread cubes in 2 tbs butter in same pan used for onion, you only want to coat the cubes and this should only take a minute or two, set aside
- In greased casserole, place tomatoes and all seasonings, sugar and onion and mix to distribute ingredients evenly. do not stir.
- Top with bread cubes
- Bake at 350 uncovered for 35 to 40 minutes.
- Note: You could add some bacon bits
- Note:You could add the oregano

This is as close to Great Aunt Mabel's tomato dish as I can remember. She didn't write it down, she just made it in front of us and expected us to pick it up by osmosis I suppose. This really is so good. Now I have a chance to make it again.
