Southern Scalloped Tomatoes Recipe
An old Southern classic that deserves a new look. Great for less than perfect tomatoes during the season, or canned during the winter.

Ingredients
  • 6 to 8 (approximate) tomatoes, unpeeled
  • or 2 cups canned, drained
  • 2 cups thinly sliced onions
  • 4 tbs butter, divided
  • 2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbs brown sugar
  • 2 tsp dried basil or 1`/3 cup fresh (preferred)
  • 1 tsp minced fresh garlic
  • 1 tsp oregano (optional)
  • 2 cups bread cubed

Directions
  1. Saute onion in 2 tbs butter until wilted, set aside
  2. Saute bread cubes in 2 tbs butter in same pan used for onion, you only want to coat the cubes and this should only take a minute or two, set aside
  3. In greased casserole, place tomatoes and all seasonings, sugar and onion and mix to distribute ingredients evenly. do not stir.
  4. Top with bread cubes
  5. Bake at 350 uncovered for 35 to 40 minutes.
  6. Note: You could add some bacon bits
  7. Note:You could add the oregano

This is as close to Great Aunt Mabel's tomato dish as I can remember. She didn't write it down, she just made it in front of us and expected us to pick it up by osmosis I suppose. This really is so good. Now I have a chance to make it again.

Chef, I made this again last week when my sister was visiting from the Deep South. She said she could close her eyes and taste Grandmother's cooking. That was the highest honor I could ever get. She said I have turned out to be a comprable cook to Grandmother. I've been so happy about that. Thanks again for finding this again for me.

This looks really good and I'm thinking that sour dough bread cubes would work well here! I love fresh basil and grow it every year....my husband groans when I put the tomato plants in but there's nothing like fresh tomatoes!


I digressed...sorry! Will bookmark this.
