Southwestern Beef Kabobs

    I actually marinated these for almost 30 hours because I had to end up waiting an extra day to make these than I had planned. VERY flavorful meat! For the veggies it didn't really say to do anything. I drizzled them with olive oil and sprinkled with some S&P. I threw in some zucchini with them because I have a ton! I did skewer separately for personal preference the meat and veggies. Very good!

    Mr P. After skewering the meat there was hardly any marinade left in the bowl! 1 1/2 pounds is a lot of meat for 3/4 cup of marinade about and it really stuck to that meat! That's when I decided to season them up and I got a about 1 good baste for each skewer of veggies and beef. There was no meat left at all but a good amount of veggies! I actually put them on baked potatoes and had them for lunch the next day!
