Southwestern Stuffed Peppers

    Recipe by NPMarie: Southwestern Stuffed Peppers
    A nice fix it and forget it crock pot recipe. It does have the southwestern twang but not overly so. Peppers were soft. Had to switch from thongs to a spoon to pick them out of the pot. Although I did leave the pot on HI for the first hour and LO for the remainder, being skiddish over my last encounter with stuffed bells. Eight hours total.
    As claimed, I didn't miss the meat at all. Sweetness of the peppers comes through as a nice counterpoint to the very little heat.
    Let these cool a bit or you'll be nursing a scorched tongue tip for a while.
    Didn't miss the salt either.

    Thank you Points for the nice review! I wanted to mention if you wanted a little more heat you could add some minced jalapeno..I did that the 2nd time I made this.. We love these stuffed peppers and you are so right, you don't miss the meat at all...very happy you enjoyed this recipe!
