How to make it

  • Cut top off each pepper, remove seeds & membrane.
  • Combine beans, cheese, salsa, corn, onions, rice, chili powder & cumin in a medium bowl. Spoon into peppers. Place peppers in Crock Pot, pour a little tomato sauce on the top of the peppers. I usually add just a bit of water in the bottom of the crockpot. Cook on low for 4-6 hours.
  • Enjoy!

    I love stuffed peppers. The Mexican twist you have on them suites me fine. One of my happy memories is coming home on a cold fall afternoon in Pennsylvania and smelling stuffed peppers steaming in my mother's pressure cooker. She would have used a crockpot if they existed way back then :)
