Spaghetti Sauce

    This is almost a run of the mill spaghetti sauce. It has a couple of problems. In the destructions section it says to add some peppers without the benefit of any peppers listed in the ingredients. I'm going to assume it is bell peppers but you never know for sure. I made it without the peppers.

    Second problem is with the simmer temperature of "medium". It really should read -medium low to low or simmer instead of medium.

    I used a 29oz can of tomato sauce instead of two 16oz cans which left me 3oz short. I added 1/2 cup of red wine to make up for the shortage.

    The first half hour of simmer had the sauce reducing down nicely. The second half hour found the sauce burned to the bottom of the pan. I poured off the sauce and boiled water in the pan to remove the burned layer and added some water to the sauce to thin it out just a little.

    The recipe would have probably come out just fine if it was processed on the simmer setting instead of a medium setting.

    After all it's probably my fault for following the recipe to the letter instead of being able to read into the recipe. It sux to be a beginner cook and having to follow new recipes on faith.

    Good possibility the author meant black pepper. Didn't use any. Added a teaspoon of salt instead of a dash. Didn't hurt the recipe. Had to add more salt later.

    Yes, I would of had to add more than I dash also. For that much sauce I usually add about 2 tsp.
