Sparow64`s Chicken Enchiladas!

    Creamy Cheesey Chicken Enchiladas
    for dinner last night. I`d bought a package of lovely soft corn tortillas for the very first time and chose this recipe to try them out on. I really like the flavour of the corn tortillas. I pretty much halved the recipe as it was just for two and I have enough left over for another meal and then some! It makes a lot!
    I`m trying to cut back on the amount of meat we eat so just used four boneless, skinless chicken thighs. I just used one red pepper and one can of Cream of Chicken soup but I did add the entire can of diced green chilies. I also used the entire small can of Rotel (which was also a first for me and I like them!). This recipe has a lot of flavour and it is cheesey! I will totally make it again.
