Creamy Cheesey Chicken Enchiladas

- olive oil shopping list
- 2 T butter shopping list
- 3lb boneless, skinless chicken, cut up shopping list
- 1 white onion - chopped shopping list
- 1 red pepper - chopped shopping list
- 1 yellow pepper - chopped (or green) shopping list
- 1 small can green chiles shopping list
- 2 T chopped garlic shopping list
- 1 t. cumin shopping list
- 2 T chili powder shopping list
- 1/2 t cayenne pepper shopping list
- seasoned Salt shopping list
- garlic pepper shopping list
- 1 t. dried cilantro shopping list
- 1/2 t. celery flakes shopping list
- 8 oz cream cheese (room temp, - melts faster) shopping list
- 1 carton sour cream shopping list
- 2 cans cream of chicken & mushroom, cream of chicken, or cream of mushroom shopping list
- 3 cups shredded mexican flavor cheese, divided into 1 c & 2 c shopping list
- 1 can Rotel tomatoes, drained shopping list
- Pace Thick n chunky salsa shopping list
How to make it
- Heat olive oil & butter in skillet
- Add chicken, onion, peppers, chiles
- Season with all seasonings through celery flakes
- When chicken is cooked through, add in pan:
- cream cheese, Sour Cream, 1 c. cheese, soup
- Cook together 5 minutes
- Preheat oven to 375
- Spreay glass 9x13 pan with cooking spray
- Roll filling in 10" flour tortillas
- Makes 10-12
- Top with 2 c cheese
- Spoon over tomatoes, and 1/4-1/2 jar salsa
- Bake about 15-20 minutes

I'm gonna try this tonight. I don't have the cilantro or celery flakes though. Hopefully it won't change it too much. I'm also thinking of shredding the chicken.
