    Spicy Carrot Salad
    This was great! The whole salad was eaten by the adults tonight. I loved the dressing!
    I used rainbow carrots and thinly sliced them with my mandolin slicer. I didn't add the raisons, so instead I added some chopped green onions for colour and flavour.
    I didn't have lemons ( I forgot I used them all the up for the greek dinner yesterday) so I used apple cider vinegar --which went especially well with my maple-mustard spiced pork chops Petes Epic Pork Chops !
    I'll definitely make these again and my Mother in law already asked for the recipe!

    Thanks Michelle! Yep, the carrots are 4 colours, yellow, purpley-red, light orange and dark orange. They taste the same though! They came in a bunch and are labelled rainbow carrots (organic from Washington) I made a rainbow carrot salad on AR that used a similar dressing and green onions, and we liked it that way!

    I get the rainbow one's from Trader Joe's and the kids are NOT impressed like i thought they would be! They don't seem to think they are carrots and think I am tricking them into eating something new lol. I will still buy them though, they'll get over it!

    Thanks :) Lol, I looked for them for months after hearing about them from other people. And just by chance when I wasn't looking for them I found them at a grocery store in town! It's called Sobey's here, similar to Trader's Joes in the US I think.
    My kids wouldn't touch them either Michelle! lol ;)
