Spicy Carrot Salad

- 1 1/2 lbs carrots, peeled and cut diagonally into 1/4-inch thick ovals shopping list
- 3 Tbs. freshly squeezed lemon juice shopping list
- 2-3 Tbs. granulated sugar shopping list
- 1 tsp. olive oil shopping list
- 1 clove garlic, pressed shopping list
- 1/4 tsp. ground cumin shopping list
- 1/4 tsp. cinnamon shopping list
- 1/4 tsp. ground ginger shopping list
- 1/8 tsp. salt shopping list
- Generous dash ground red pepper shopping list
- 1/2 cup raisins * shopping list
How to make it
- In a 4-quart saucepan, bring 2 quarts water to a boil. Add carrots and let return to a boil. Cook until crisp-tender, about 2 minutes. Drain well and let cool slightly. In a large bowl, whisk together the juice, sugar, oil, garlic, cumin, cinnamon, ginger, salt and pepper. Toss with carrots and raisins. Refrigerate until chilled, about 3 hours
- *Substitute chopped apples or orange segments for the raisins.

08/24/2015 This is excellent! I cut the carrots into ribbons instead of slices. And replaced the raisons with green onions to make it more savory, more info here: more
