Spicy Refried Bean and Sweet Onion Chilaquiles

    This is a great recipe! Definitely some kicked up refried beans. My cheese choice was mozzarella. I did as suggested and made some tortilla chips to go with. Topped with tomatoes and green onions and this was a very flavorful dip!

    I just cut up some flour tortillas in chip shape and drizzled them with a bit of olive oil and baked them for about 15 minutes at 350. When they came out I sprinkled them with kosher salt. They were so good! I agree jack cheese would have been awesome in this and I probably would have used that if I'd had it ;0)

    Lol Frankie! Yes I did do the strips too and they soften up a whole lot after being baked and kind of blend in with everything else so they go really well with the crispy chips! I ate the leftovers of this in flour tortillas, like a bean burrito, and it was delicious as well!

    Thanks Mr P! Good to see you ;) You know, now that I think about it, I used cayenne. Since it was just adults eating this who like spicy, I find that cayenne is spicier than the others IMO. I don't have chipotle chili powder, but I do have chipotle flakes which are kind of mild to our taste.
