Spicy Refried Bean And Sweet Onion Chilaquiles

- 6 corn tortillas, cut in strips shopping list
- 1/2 large sweet onion, sliced shopping list
- 1 tsp olive oil shopping list
- 1/2 cup chicken broth shopping list
- 1/4 tsp garlic powder shopping list
- 1/4 tsp cumin shopping list
- 1/2 tsp chili powder (I used chipotle chili powder) shopping list
- 1 16 oz can refried beans shopping list
- 1 8 oz can tomato sauce shopping list
- mozzarella, monterey jack, or white mexican cheese, finely shredded shopping list
- optional garnishes: diced tomato, sour cream, cilantro, black olives, jalapenos, extra cheese, ??? shopping list
How to make it
- Preheat oven to 325ยบ. Line a baking pan with aluminum foil. Spread the tortilla strips out in a single layer and lightly cover with cooking spray. Bake 15 minutes or until crisp. (Frying is the traditional method of preparing the tortillas for Chilaquiles, but baking them saves calories...your choice!)
- Saute sliced onions in olive oil until translucent. Add chicken broth and spices. (I use spicy refried beans, so if you choose not to, be sure to add more spices and seasonings to taste.) Allow the broth mixture to come to a boil and then simmer until reduced and the mixture is thick, not soupy. Stir in the beans. (Now's the time to mash them if you decide to use beans other than already prepared refried.)
- Layer the tortilla strips, bean mixture, tomato sauce and cheese in a 1 1/2 quart baking dish. Repeat layers, ending with cheese. Bake for 30 minutes covered, uncover for 5 mins.
