Spicy wild duck stir-fry by Jimrug1

made this yesterday. Came out really good. Very rich flavours, very interesting dish! I made a mistake by using a very rich soy sauce, so mine came out a little too salty. Will definitely make again, just with a low-sodium soy this time. Added a picture under his main one.

Julia, The extra saltiness may not have been the xtra rich soy. I did an "opps" there on a couple of items..

    1. The recipe I posted said to use salted peanuts.. I always use unsalted.

    2. I forgot to specify Low sodium chicken broth.

    3. The reicpe I posted was actually double the original recipe I use. For the sauce, doubling the recipe actually called for 3 1/2 Tbls of Soy Sauce and I rounded it off to 1/4 cup to make it simple.

I like using rich soy myself.. I am not crazy about the taste of Low Sodium Soy.. Try cutting back a little on the quantity of Soy next time.

Thank you for the honest review and taking the time to add the wonderful photo.

I edited the recipe based on your review. Corrected the above and also added 1 extra teaspoon of brown sugar. That should also help balance out the saltiness from the extra rich soy.... Thanks again... Please let me know what you think if you try it again.

I am curious what kind of duck you used?

It was still delicious, Jim, just a little salty. Got eaten quick anyhow! I did use regular chicken broth and salty nuts, now that you brought it up. I couldn't find duck breasts, but I did find a whole duck. Took me forever to carve that thing! I got to tell you, it's hard work getting the meat separated! I used some pieces of dark meat as well. It came out juicy and tender, thanks to your reminder of not overcooking the game.
