Spinach Mushroom Quesadilla

    I was craving a quesadilla today. I have my sprouted wheat tortilla's I use now to make me feel better about eating them, lol! Used fresh mushrooms and a small handful of quartered cherry tomatoes. My new favorite way to make quesadilla's now is with cooking spray, put the butter back in the fridge! Served with some fresh gaucamole and salsa. Yummy :)

    That is a really great picture. I love the green onions sprinkled around. I've always done my quesadillas in a dry, non-stick pan. Don't know why I do it that way.

    Love all of the fresh veggies in this...lovely pic Michelle! I use a non-stick pan as well when making quesadillas. I have never even thought of using oil or butter!

    I guess the thought of using a dry pan makes me think the tortilla would burn quick? Guess not lol! When I don't want to have the extra calories I like to bake mine to get it crisp. I love this cooking spray method!
