Squash And Corn

Recipe by Chefmeow: Squash And Corn
Nice vegetarian stuffed peppers. Lots of good flavor. I like the hint of black pepper at the end of the chew. Used 4 slices of bread to make Homemade Panko Bread Crumbs. Made about one cup of crumbs which was good enough to sop up any extra liquid. Added butter and Italian herbs to the crumbs.
First taste of the stuffed pepper reminded me of a bread stuffing for turkey.
I did steam the bell peppers for 15 minutes to ensure they were not crisp crunchy. Don't know if I needed to do that. Texture was just right for this family.
The carnivore in me kept saying bacon or ground beef or cheese, but it stands alone without those additions.

Stuffed bell peppers are one of mothers fav's. I have been getting the bells too crunchy for her in the last few attempted recipes. This steaming technique seems to fit the bill nicely. If I hadn't given her a slice of bread I'm sure there would be tongue prints on the plate.

There isn't much seasoning in that recipe. I would think that adding herbs to the bread crumbs would help that. Do you think there would have been enough seasoning without the herb-ed up bread crumbs?

I thought so but mother said it needed a little salt but wasn't really complaining. I salted and tasted before simmering and it seemed alright to me. I'm on a lower salt diet and trying really hard to keep it. So maybe it's a mind over matter thing.
Using a salt substitute that doesn't have any sodium chloride at all.
