Squash Casserole Country Style

    Recipe by Dugger: Squash Casserole Country Style/saved
    Already in the Reviews profile. Added a link to the IMI group.
    This recipe should be good although I did use some under ripe squash.
    Doubled the recipe and peeled the squash.
    In this recipe I think "country style" means; mix it all up in one pot and bake it.
    Doubled the recipe. Fit into a 7x11 dish. Added 3 minutes at the end of bake with the convection fan on for browning.
    I have found I like these squash sans skin. Plus there is more material for my compost heap. No reflection on your recipe Dugger. : )

    I didn't know exactly what large squash were and kind of guestimated with what I had. Wanting for the casserole to set good, I added 2 extra eggs. It set nicely. Slice comes out of the dish in one piece when cut.
    This dish has a lot of latitude. You could add more cheese if you wish and even add a crumbled Ritz cracker topping dotted with butter. One sleeve of Ritz crackers, crushed, equals 1 cup.
    Don't forget to season the squash while sauteing.
    Falls just a little upon cooling.
