Ingredients

How to make it

  • Saute squash and onions in a medium skillet over medium high heat with a little oil until tender. Add salt and pepper to taste.
  • Melt the butter (microwave works fine). Beat the egg and mix with milk, bread crumbs, cheese and butter in a medium mixing bowl. Add the squash and onions, fold together.
  • Place in a small greased baking dish and bake at 325 degrees for 25-30 minutes.

    Well, it's not squishy but not crunchy either. It is FIRM. I'd think if you want it crunchy up the amount of breadcrumbs in it and top with a crust of corn flake crumbs with a little butter. That should do the trick.

    Here's a little bribery for you...find that Ambrosia recipe of Your Grams and you can have the zucchini recipe :>) I want the old fashioned southern style not some updated one. It has mandarin oranges and chopped pecan, coconut and for the life of me can't remember the rest. I spent last night on the phone to KY. w/ cousins but they said only AUNT MABEL HAD THE RECIPE...MY GRANDMOTHER!!!

    This and zucchini casserole are staples in my house. I add crumbled gorganzola to my cheddar in my yellow squash casserole. I love the zing.
