This and zucchini casserole are staples in my house. I add crumbled gorganzola to my cheddar in my yellow squash casserole. I love the zing.

Hmmm... beginning to wonder if your grandmother and mine were not sisters. LOL. Of course now I want your Zucchini Casserole recipe.

Here's a little bribery for you...find that Ambrosia recipe of Your Grams and you can have the zucchini recipe :>) I want the old fashioned southern style not some updated one. It has mandarin oranges and chopped pecan, coconut and for the life of me can't remember the rest. I spent last night on the phone to KY. w/ cousins but they said only AUNT MABEL HAD THE RECIPE...MY GRANDMOTHER!!!

Hey Doug is this crunchy when it is done? I love squash if it is crunchy, not squishy. haha
Gem :)

Well, it's not squishy but not crunchy either. It is FIRM. I'd think if you want it crunchy up the amount of breadcrumbs in it and top with a crust of corn flake crumbs with a little butter. That should do the trick.

Oh my goodness...this sounds like what my Mamaw used to make!!! I may have fallen in love with you Dugger!!! I'm making this tomorrow night--Always, Tami

This was really good but i would leave the topping off. it was great for thanksgiving

Yum yum my kinda cooking !!

Oh yeah! Another memory from my Gran! Thanks!

Hmmmm...either I knew everyone's grandmother or they were kin. This is scary. LOL And remember I'm old enough to be your grandfather.

i like the idea of adding gorgonzola...as i am not a big fan of cheddar...
i think i might try this with parmesan-though of course that is the Italian in me talking...

thanks for the inspiration!

hi Dugg, sounds like my Grandma's recipe only she would add a little sugar while the squash was cooking and use a can of cream of mushroom soup along with the cheese....she also used breadcrumbs as the topper or durkee onions. Being from TN, I love southern cooking!
