Stuffed Chicken Breast

My breasts were HUGE, so decided to cut them in half on diagonal so they would keep the right shape, but then they were on the smallish side. Should have left them whole, oh well, live and learn. The smallness shows in the picture although one was plenty for one person. I wanted to fit a good amount of stuffing in each one, so they did not make contact at the edges. I really liked using the parchment paper, the chicken stayed nice and moist. Pineapple was a very nice addition in this, Michael really was surprised by that for some reason lol. A very nice, flavorful stuffed chicken! Added my sad little chicken picture lol.

Glad you enjoyed my clucker recipe. Nice pic. You did a better job of filleting than I did. Hope you used the smoked mozzarella. It adds a wonderful flavor.

Thanks everyone! I tried stuffing as much as possible in there if you can't tell haha :) Points, my store that has a HUGE collection of cheese, did NOT have the smoked mozz. I couldn't believe it. I used regular fresh mozz. though which I thought was still great, but I know that smoked would have been even better :(

Looks great, I would never have thought to add pineapple! What about some nice smoky bacon if you can't get the smoked mozza?
