A nice casserole. It has a southwestern flair because of the salsa. Mother liked it a lot. Used Lanas Fresh Homemade Salsa which is also good. It called for a jalapeno, which I was wary about. But seeded and chopped fine, it did not even stand out.
AND it all fit into a 9x13 casserole dish.
Used 1 pound of extra sharp cheddar.
Used 2 cups regular white long grain rice instead of the instant and it still all fit into the dish.
Wouldn't hurt to add a little more salt.
