Summer Squash, Tomato & Ricotta Galette

    This is a great and different way to use up some of those garden veggies! I used only yellow squash, and some big fat juicy tomatoes, even though I was tempted to use all cherry tomatoes just because I have millions of them. I didn't roll the puff pastry out enough to get it up the edges enough to fold over the vegetables, but it turned out fine. Also used a 9x13 pan for this. This is so good and fun to look at too :) The fresh basil on top is the perfect ending to this, such a good summer dish!

I can hardly wait until we start seeing fresh veggies here! It has rained and been so much cooler this year. I am afraid we won't see much fresh produce until, possibly the middle to late July?
