Sweet Potato Pancakes (Latkes)

For lunch yesterday I was going to pan fry up some chicken sausages but wanted a side dish including sweet potatoes, but not the boring old way I usually make them. Found this recipe in my box and jumped right on making it :) Very easy and tasty too! I did not measure my cayenne pepper and just added how much I felt was good for me. While cooking in the pan, I pressed the cakes down to make them very thin and went ahead and skipped the oven part as I felt they were done all the way through. Did reheat the leftovers in the oven though today :) Thanks Dahlia!

I have had a love/hate relationship with sweet potatoes. My Mom used to make mashed sweet potatoes when I was a kid....I think she even sprinkled brown sugar and put butter on them. Gross me out. But....as an adult I've had sweet potato fries and totally enjoy those. I think I'd like these latkes. I love smoked paprika. Gonna give it a whirl. Bookmarked now to try. Thanks Michelle for bringing this to my vegetable attention. :)

Janet, my Mom NEVER cooked sweet potatoes! My first time having one was when I was pregnant with Bri working as a waitress. I would eat them the savory way though, with bacon, cheese, chives and butter lol. Eventually tried them the way most people ate them at the restaurant finally with butter and toasted marshmallows and WOW! Hope you like it this way, and yes, the smoked paprika is SO good in this :)

FA, I added the green onions for a pop of color in the picture, but they did add a great flavor! Yes, the kiddos do like sweet potatoes, especially with butter and brown sugar like Janet detested them as a child lol. But they will eat them anyway I serve them, no complaint :-)
