    Recipe by Shandy: Top Of The World Pancakes
    Added an extra half cup water to thin the batter. Author adds extra water too.
    Didn't have buttermilk pancake mix. Used flour with 1 1/2t baking powder and 1/2t salt per cup.
    Cake had nice puff, not too much. Used imitation vanilla instead of the expensive stuff. Added a nice flavor.

    Recipe made 5 cakes. Three minutes on the first side and 2 minutes on the second side. Make sure the skillet is hot for the first cake, then you can back it down to medium for the rest. It brings out the best puffiness in the cake.
    Mother likes gravy on her pancakes instead of butter and syrup.
    I'm glad to see her going the savory route over the sweet.
