Tortilla Chip Casserole

    Recipe by Fluttergirl: Tortilla Chip Casserole/saved
    It's a good tortilla chip casserole. Made it with a Frito corn chip knock off brand. Gave it a nice flavor. Used one chipotle instead of the diced green chiles.
    Ingredients didn't say whether the "cream of" soup was condensed or not. I used condensed and added water. Chips sucked up all the water.
    Even had a couple of handfuls of old honey nut cherrios that I threw in there too.

    The casserole was good and firm, nicely set. I was afraid it would be soupy because of the added water to the condensed soup. Such was not the case. The picture shows how well the casserole set up. And the one chipotle did not give it too much heat. Yes I would make it again and maybe even use flour or corn tortilla chips to make the taste more authentic.

FYI: Any time a casserole calls for 1 can of cream of soup, it's just the can of soup. No water. (Especially when it doesn't list water as an ingredient, or, say to mix the soup with water first in the instructions). : ) I like the addition of the chipotle, too. Good job!

    My problem was finding cream of chicken soup. All my stores had condensed cream of chicken soup. Still, blind luck or not, I would like the recipe to be a little more specific.

    P, All cream of soups are condensed, (you won't find one that you don't add water to for the making of the soup). Most people never use the word "condensed" in the recipe.

    Great casserole idea! I have this bookmarked to try soon. To the best of my knowledge they do still make “ready to serve canned cream soups” which are not condensed and available in several sizes. At least they still do here anyway. I hope this helps:-)
