Recipe by Fluttergirl: Tortilla Chip Casserole/saved It's a good tortilla chip casserole. Made it with a Frito corn chip knock off brand. Gave it a nice flavor. Used one chipotle instead of the diced green chiles. Ingredients didn't say whether the "cream of" soup was condensed or not. I used condensed and added water. Chips sucked up all the water. Even had a couple of handfuls of old honey nut cherrios that I threw in there too.
The casserole was good and firm, nicely set. I was afraid it would be soupy because of the added water to the condensed soup. Such was not the case. The picture shows how well the casserole set up. And the one chipotle did not give it too much heat. Yes I would make it again and maybe even use flour or corn tortilla chips to make the taste more authentic.
Sounds good. Very similar to one I have posted (Mexican chicken pie), but different. lol Thanks for posting, I am going to save this one to try. I'm surprised it wasn't soggy! You lucked out. FYI: Any time a casserole calls for 1 can of cream of soup, it's just the can of soup. No water. (Especially when it doesn't list water as an ingredient, or, say to mix the soup with water first in the instructions). : ) I like the addition of the chipotle, too. Good job!
Sounds like a great recipe! That really did hold together well. I have a ton of Fritos (regular brand) ;) right now for some reason, and tons of ground beef. I'm putting this on the menu for next week. Thanks Points!
Great casserole idea! I have this bookmarked to try soon. To the best of my knowledge they do still make “ready to serve canned cream soups” which are not condensed and available in several sizes. At least they still do here anyway. I hope this helps:-)
