Recipe by Jo_jo_ba: Tree Climbin Bread
Didn't like this recipe so much. I think it has too much liquid in it for the dry ingredients. Maybe cut back on a banana would make it better.
Got plenty of juice out of the bananas. Not sure why the applesauce was added but I did some homemade applesauce.
Added the optional ingredient. The cinnamon flavor was strong for me for some reason.
Knife still had batter on it at the end of bake time. Added 10 more minutes with the knife still having batter on it. Added 5 more minutes with the knife still having batter on it. Added 10 additional minutes and still with batter on the knife.
The crust was starting to turn too much of a brown color so I pulled the loaf. A total of 50% more bake time than the recipe time.
I think the loaf is done because the top springs back when depressed. It is a little gooey still on the inside but everything holds shape.
It's an interesting use of cornstarch here. I think it's to thicken everything up and hold it together in the absence of an egg.
Loaf fell quite a bit on cooling.
Took picture with a flash. It makes the loaf look more wet than what it should. Everything is set, just the knife won't come out clean.

Yeah, I can tell by the picture that it looks a little wet. Love that I can see the little flakes of orange peel though!

Yep, that looks pretty moist. Actually, that looks like a recipe I could handle. Some of Jo_jo_ba's recipes have ingredients I would have to buy online. She has some different ones out there.

I know what you mean. I always run onto some of her recipes I would like to make but it requires special ingredients I don't normally keep and would pine away in the pantry after first use.

I've had to be careful about Cooking Light's recipes too. Lots of times they have a special ingredient also.
