Tuna And Egg Salad Sandwiches

Recipe by Hayleesgrandma: Tuna And Egg Salad Sandwiches/saved
Differed a couple of ways from the recipe. Blended ingredients in a food processor so it wouldn't be so chunky. Used Miracle Whip instead of mayonnaise. Couldn't see buying 2 bottles of mayonnaise for just a half cup combined when I already had the Miracle Whip. Mother insisted on Mackerel instead of Tuna. And I'm not enamored by the destructions for making the eggs. They're too soft boiled. The egg keeps breaking apart when peeling.
Threw the stuff together on plain white sandwich bread.
    Flavor's good.
Since my way is blended so good, it would make a good dip or be eaten with a spoon.

Hmmm...interesting the method for hard boiling the eggs didn't work well for you, Points. That's how I make them and they come out perfect every time. I love a good tuna salad!

Was just looking at the hard boiled egg recipe I have posted and it varies a little. It adds 2 minutes for the dwell time and covers the pot for the dwell time.

I've never had tuna and egg salad! That sounds interesting. I wonder why 1/4 cup of reduced fat mayonnaise and then 1/4 cup of regular? That seems odd to me.
I always use 20 minutes for my hard boiled eggs. :)

I always use this method of doing my hard boiled eggs. I just turn the burner off and leave the pot still on the hot burner for 15 to 20 minutes depending on how many eggs I have in the pot. I have never had tuna egg salad either!

We make tuna and egg all the time. It's fantastic. The two just go together well. I just make my tuna salad the way I like then lay slices of hard boiled egg down onto the sandwich first (lazy way) or I chop the egg up like I would for egg salad and simply add it to the tuna salad. Once you have tuna and egg it's hard to go back to just tuna.

I like the idea of the slices of egg better. I'll have to give it a try. Thanks for the tip! :)
