Turkey Enchilladas Verde
I made this for dinner tonight. I did not have any left over turkey so I used chicken breast which I ALWAYS have. This is my first attempt at enchiladas. I am happy with the turnout. This was so so good. I forgot to add the chilies when I made them so I added them on top after along with tomatoes and green onions. Chuckieb pointed this recipe out to me and I am SO very glad she did. Thank you Chuckieb. And thank MimiOE for a great recipe. Now I am on an enchilade kick and a crock pot kick. I wish I could eat more : )

Thanks you 2. There is a lot of food there. I had some for a late breakfast. Easy to do for the amount of food. Lotta leftovers are a good thing = )
