    Twice Baked Spinach Potatoes

    I started to make this for dinner. It was going to be all I was going to eat since it was such a large potato and I wasnt that hungry at the time. After smelling it during the second bake I got more hungry and it became a side to chicken. Instead of cutting the potato in half and making like a bowl, I wrapped them in foil and sliced open to remove inners. I also added Parmesan cheese on top. Oh, and I wasnt sure what evaporated milk was. I thought it might be instant/powdered so that is what I used, but I had to add water after cuz the potato was too clumpy. Such a great way to eat a potato. Thanks Chuckieb for a really great recipe

    P.S. Evaporated milk comes in a can, MrP. So its a liquid. Which is why your potato got clumpy. Good save and good thinking! :)

    My Dad used Carnation Evaporated milk in his coffee my whole life growing up and I did the same. Didn't even think that it was a 'surprise' ingredient. LOL! You could totally just use regular milk or whatever you keep in your fridge. Evaporated milk tends to be a little sweeter/thicker. I guess what I should say is....use whatever you normally do to mash your regular potatoes. Whew. LOL!

    Oh. I know what you mean. I never knew it was called evaporated milk. I always called it "canned milk" and used to love drinking it as a little kid. Guess I should read labels more =O Thanks

    Thanks ML2C. It was VERY good I havent abandoned the celery leaf. I just didnt want anyone to forget about my favorite glass. Actually this is my favorite glass' sibling. His brother (Wicked Ale) went to a better place years ago after one glass of beer too many and I dropped him : (
