Ultimate Banana Bread

    From America's Test Kitchen: http://www.americastestkitchen.com/recipes/detail.php?docid=25349
Happened to see an episode of America's Test Kitchen on making the ultimate banana bread. Looked it up and found the recipe. Can't tell you how it tastes or looks like in the middle because it's going to the Christmas dinner. I'm sure I'll have some input later.
It looks good and has a crispy topping because of the sugar sprinkled on top.
    Here's a pic.
Five bananas in the batter and one on top along the edges.

You, dear sir, have a LOT of willpower .... that's a ton of baking and freezing without sampling you've been doing!

Pulled everything out of the freezer this afternoon. Stacked all the fudge in a nice tin. Fit them all in except one piece. Couldn't figure out what to do with it except sample the work. That should hold me 'till tomorrow's dinner.

Back on topic, the toothpick test doesn't work. Bread is too deep. Had to use a wooden meat spear.

A piece of spaghetti can be used for tall breads, too, if there's no meat spear. That looks great, pso. But, I've been hearing so much about Christmas dinner! It sounds like its going to be a real feast there! Is it a community thing? Or am I being too nosy?

Senior center Christmas dinner. It's the last day the center is open for a few days. It's sort of a pot luck affair.
BTW the banana bread was received well but I still have half of the loaf left. Banana flavor is intensified in this loaf more so than a standard banana loaf. The banana juice is condensed by simmering from 3/4c to 1/4c to give the loaf more flavor punch.
I like the last banana feathered along the sides of the loaf. It turns into a half dried half caramelized banana slices that add intense flavor.
This recipe stands up to its advertizement.

Oh, I see, pso! Sounds nice. I read your other threads to get caught up. Sounds like your contributions were a hit!
Go for it, ml2c. :) I can't remember where I heard that one, but I'm sure its probably been around a while. Longer than me - hopefully! :-P

Im going to try this next week. Need the bananas to age. I like how they explained ripened bananas. I always thought I had to let them get almost black. That was always the worst thing about making banana bread. They're so slimy gooey and mushy. I look forward to this.
