    Mulligatawny Soup

    Wow! I'm giving this a '10' ! It was totally awesome and is totally going in my 'keeper' file! I did everything pretty much to the book except I cooked boneless chicken thighs which I had cut into teeny chunks along with my onions as the only cooked chicken I had on hand were some rather dry breasts and I thought this would taste nicer. i didn't add the lemon juice or the lemons as once I'd tasted it I didn't want to change a thing. I did use the entire can of coconut milk as opposed to one cup of it as there really wasn't much left in the can and I didn't want to waste it. I didn't puree it as I like the thicker, chunkier consistency. The lentils were divine. What a perfect way to thicken this soup. The basmati rice in the bottom of the bowl is like a little surprise. Would be a fantastic cold weather soup and really a whole meal in a bowl. So awesome Val. Kudos to your Grandma for teaching your Dad how to make it! And thank you to you for sharing!
