    A good tasting bean dish.
    I did an overnight bean soak in saltwater to see if the beans would come out soft. Baked up in 2 hours. Did not do a side by each experiment, so I did not have anything to compare it to. But at least they didn't come out hard, which is kinda what I was worried about.
    Did add about a quarter cup of black beans only because the last black bean recipe I made took forever to get done. Those shells were still a little hard in the 2 hour simmer time.
    Next couple of times soaking beans I still will use the brine method. I want to be happy with this new soak method.
    Did not add the salt or tomato until beans were almost done. From my readings, acid content is what keeps beans hard.

    hehe I am kinda scared to try some beans after the "hard bean fiasco of 2013" I experienced a couple of months ago. :-)

    Try a brine soak. One gallon water to 3 tablespoons salt for 1lb dried beans. Soak just like you normally would overnight and rinse well. At first blush I'm impressed with the results and I might have had some overly dry black beans but they're all gone now. I know the feeling about wasting all that time and energy on dismal results.

    Don't let that one time ruin it for you FA. My MIL had the same situation as you did, and she's still doesn't make beans cause of it. I promise you had to have had bad beans or something....

    Just checked a bag of lima beans. There is a best by date stamped on it. So check your beans when buying. Can't say if you buy in bulk from a dried goods store.
