    I love bean salads - especially white bean salads. Not certain what has happened to my taste buds but I am finding that I find extra virgin olive oil overpowering (for me) in salad dressings so I used canola and it was just great! I have a lot of tomatoes to use up and I also had a bunch of green onions in my refrigerator that I needed to use. This recipe couldn't have come at a better time for me! Loved it!

    Good Extra Virgin Olive Oil has no flavor.

    I know, pso!! Its so exasperating. A couple of years ago, I had a bottle of olive oil and when I opened it up, I swear it smelled like diesel. I chugged it down the drain. I buy Colavita only because I read somewhere that it is the best in that particular price range but it still isn't fabulous.

(as it always is) I used to use Bertoli (spelling) I used it for years. then a friend of mine said that they had done a blind test on many different olive oils in the US. and listed out the top 5 Trader Joe's brand was like number 2 or 3. I went out and bought a bottle. now they had said that Bertoli tasted greasy (hello it's oil?) well, I put some Bertoli on my finger and tasted it YUCK! greasy, rancid tasting, and Very strong. so I put some of the Trader joe's brand on my finger. OMG! Not greasy (WHAT??) and light tasting, and very nice. and MUCH CHEAPER than my preferred brand for years before. I dumped the last bit of Bertoli went with the Trader Joe's brand Much Much more mild and where I used to pay about 8 dollars for 16 ounces of Bertoli. TJ's is about 2.99 for 16 ounces. they have another brand at TJ's that was number 1 but I just went with TJ's brand.

    I never did like olive oil, but found a really really mild one called Al-Wadi at a local international food store. For the past few years I've been making our salad dressings and have had to chuck most of the olive oil based ones down the drain because the oil flavor is too overpowering, even the mild one. Now I don't make any oil based dressing unless I've had it somewhere else first, just to keep from wasting ingredients.

    On a different note, Mommyluvs2cook, per your suggestion, I checked Williams-Sonoma for balsamic vinegar, something else I don't really like, but found a FABULOUS one! It's the Olivier 25 year-aged and is a bit pricey, but worth it! Now I don't remember if that's the one you recommended, but I love it!

    If you want an olive oil without much flavor at all, as it should be, try lite olive oil.
    Lite olive oil is extra filtered to get out a bunch of stuff with the end result of having a much higher smoke point. Its color is lighter than the other oils. That's why it's called lite. That lite olive oil moniker is a bit misleading.
    If you're into fried foods, lite olive oil is the way to go.

    YW FA. also Trader Joes has the least expensive and lowest sodium Soy sauce I have found. also. their soy sauce has 100 less mg of sodium than Kikkomon's and is only about 3 dollars for a 17 ounce bottle. and their basamic is cheap too. not too bad either. it's not as good as a 25 year old by any stretch but it is good and great for cooking, and marinades. for a darned site less.
