Winter Minestrone Soup

    Have made this soup many times and its one of my families favorite. I've always made it exactly as the recipe states, but tonight I changed it up because my pantry didn't have all the ingredients. This time I used kale instead of swiss chard, pork n beads, because gasp I didn't have cannellini beans or northern beans and dry hard salami instead of pancetta. The pork n beans gave it a bit more tomato flavor where the cannellini beans tend to mask some of that flavor a bit and the salami was a nice change and texture over the pancetta.

    I love Giada's recipes but never made this one. I like your changes too, the salami sounds like a great change up! I can never find cannellini beans here, the last time I looked for them I ended up with pinto beans, lol :)
    I'll definitely give this recipe a try too! :)

    Cosmicmom, I think Bush's makes them if you want to check 'em out. Actually, I don't like cannellini beans, so always sub with dark red kidney beans, which we like lots better :)

    You can't find cannellini beans you can also use northern beans. I've used both in this recipe. Many times when I'm at the store and I'm shopping by memory I don't alway remember cannellini bean and I'm always looking for the can of white beans, so hence northern beans.
