I could have put this together wrong. The recipe wants 3 cups grated zucchini. There is no way in hell that 2 medium zucchini will make about 3 cups grated zucchini. I'm wondering whether the author meant shreaded instead of grated. It took me 5 zucchini and I was still not at 3 cups.

Grating zucchini makes mush. Depleted my supply of zucchini in the crisper, which is a good thing.

I drained off all the liquid from the zucchini mush. Maybe that was a mistake.

Didn't have any pecans. Was going to use some other nut but just left them out.

Used white chocolate morsels as a sub for chocolate chocolate morsels.

Used quick release foil. Run out of parchment paper.

Toothpick test at 30 minutes left the 'pic still wet with batter. Added 10 more minutes.

Loaves turned out a little on the dry side albiet rich as advertised.

Slathered on some Nutella to try to make the loaves a little moister.

I need to make this recipe again, this time shredding the zucchini. That will probably put a little more liquid in the loaf.

I always grate my zucchini in the food processor. Yeah, it turns into mush but I never drain that off. The 12 (?) loaves I made recently were fabulously moist. Plus draining the liquid would reduce the amount measured into cups.

The loaves weren't crumbly dry, just a little dry. But mother confessed she needed milk to help swallow it down past her tonsils. Yeah, she's still got them.

Dove into the second loaf today. It was better than the first one. A little less batter in the first one. But can't taste any zucchini at all. Chocolate flavors are covering it up.
