Wynne's Beer Butt Chicken

  • mrpiggy 10 years ago
I made this a couple of months ago and never got the chance to get back to IMI. I have been wanting to make a whole chicken. I know its been well over 10 years since I have and this was the perfect recipe for it. Instead of making/using the carolina rub (waz being lazy and didnt make it) I used Italian seasoning and S&P. I also threw in several rosemary branches into the beer can. This was SOOOO good. Super crisp and VERY moist. Ate 1/2 of it that night with only a 22oz ale : ) Thank you Wynne for another awesome recipe and a GREAT dinner

I dont like skin unless its real crisp. And this WAS!!! I cant eat it otherwise. It just seems slimy and brings back memories of when my dad would make me eat it when I was a kid. He'd say "Its good. Thats where all the flavor is!"

Same with bacon. Bacon should break when properly cooked. Nice and crisp : )

Did you cook that in your oven or on a grill, MrP? I've never tried this method before. I need to but I'd need to cook it in my oven. I know pso did a beer can chicken in his oven with good results.

I haven't made a beer can chicken either..do you close the lid on the grill I wonder? I don't think it would close with a chicken being upright. (?) I'll have to check that out, because this looks awesome!

Yes Marie....I close my lid to the BBQ when I do a Beer Can chicken. I take off the top 'warming rack.'

I made this one in the oven due to the BBQ I have now will not fit a standing chicken. Back when I used to make these (called them drunken chicken) I always grilled them with the lid down. Always had a giant BBQ, tho. I purchased a beer stand this time. Makes it so easy. Before you had to be REAL careful not to tip the chicken. And a drunk chicken with a suppository can is pretty tipsy without one : D
