Think of the spices you like and combine a small amount of them, but use the same amount for each one, then taste them. If you start with say 1/8 teaspoon of each of the spices you like, you won't be wasting a lot of them if they don't taste good. Once you taste them, you will know which ones you need to leave out or which ones you need to increase. Keep a record of the spices you use and the amounts of each one each time you make a new mix. Then create a rub or a sauce for the ribs after you've perfected the spice ingredients. Only use 2 or 3 ribs, again to minimize waste, cook the ribs with your rub or sauce and try them. A recipe doesn't come together the first time you create them, you have to keep working with it until you get it just right. It seems like a lot of work and time, and it is, but it's worth it when you get it the way you want it and every one (hubby, kids, other family members and friends) who tries it after you've cooked it up like it. Then you've created a recipe, your masterpiece. :) After a while, you'll automatically know which spices blend together really well and what main ingredient (meat, potatoes, salad, soup, etc.) they work best with, creating recipes will be much easier after that. Try it, it really is fun!
